fred, yes, i've been to peace gardens. very nice, haven't been there since i was a little boy however.
as far as a recommendation, i'd say on the western side of the state, visit medora and the "painted canyon." this was one of president theordore roosevelt's favorite places in the united states. see:

if you ever look in the grocery store for "buffalo," chances are it was raised in north dakota.
and there is excellent pheasant hunting throughout the state. my dad still has a large farm there that has been in our family since the homestead act in the 1800's.
