So on the rear spec, stock T is 170/70,valk is 180/70, GL1800 is 160/80, but I also see the 180/60 for some goldwings, and I'm wondering if it will work as well? Thanks,

It will work. There were at least a couple of folks that use this size on their Tourer. As mentioned before, you will lose ride height in the rear which is
most noticeable as cornering clearance.
here are the diameters in inches E3 180/70...26.06 (btw, this tire has the deepest tread for max life) E3 180/60...24.39 206 170/70..25.40 So it's about an inch shorter than the OE size, which will drop about 1/2 inch clearance.

I have the Metzeler ME880 180/70-16 on my T now and it fits fine. 14K miles and still has 25% tread left.

I did the rear Goldwing tire and for me it did not work out. I like the cornering clearance with the valk rear tire better, although the GW rear seemed to
make the bike more stable in general riding. I have some other posts about it here and there. http://hondashadowacetourer.yuku.com/topic/6668?page=2
